A simple, quick, and delicious side dish featuring caramelized carrots glazed with pure maple syrup and fresh thyme. Perfect for busy weeknights, potlucks, or holiday meals.

Ingredients

  • Large carrots, peeled and cut into 1/4 inch sticks
  • Extra virgin olive oil
  • Pure maple syrup (2 tablespoons)
  • Fresh thyme leaves
  • Kosher salt
  • Freshly cracked black pepper

Instructions

  1. Preheat oven to 400°F (200°C). Line a 13×18 inch rimmed baking sheet with parchment paper.
  2. Wash and peel carrots, cutting them into uniform 1/4 inch sticks to ensure even cooking.
  3. Place carrot sticks in a large mixing bowl. Drizzle with olive oil and maple syrup. Sprinkle with salt and pepper and add fresh thyme leaves.
  4. Toss carrots until evenly coated with a thin, glossy layer of glaze.
  5. Spread carrots in a single layer on the prepared baking sheet, ensuring they are not overcrowded.
  6. Roast for 20-25 minutes, tossing halfway through to ensure even browning.
  7. Carrots are done when tender and caramelized. Remove from oven, taste and adjust seasoning if needed.
  8. Let rest for one minute before serving immediately.

Notes

Ensure carrot sticks are uniform in size for even cooking. Do not overcrowd the pan to prevent steaming. Use pure maple syrup, not pancake syrup. Fresh thyme is preferred over dried for better flavor. If using honey instead of maple syrup, watch closely as it burns more easily.
