A simple, moist banana bread made with just five core ingredients that rests overnight to develop deep flavor and a tender crumb without any kneading.

  • 1.5 cups all-purpose flour
  • 0.5 cup granulated sugar
  • 0.25 cup unsalted butter (melted)
  • 2 large eggs (room temperature)
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Peel ripe bananas and mash them in a medium mixing bowl until mostly smooth with a few small lumps remaining.
  2. Add melted butter, eggs, and vanilla extract to the mashed bananas and whisk until well combined and smooth.
  3. In a separate small bowl, whisk together flour, sugar, baking soda, and salt to ensure even distribution.
  4. Pour dry ingredients into wet ingredients and gently fold together with a spatula until just incorporated; do not overmix.
  5. Grease a 9×5 inch loaf pan with butter or cooking spray, pour in the batter, and cover tightly with plastic wrap or a towel.
  6. Refrigerate the covered pan overnight (at least 8 hours or up to 24 hours).
  7. Preheat oven to 350°F (175°C). Remove plastic wrap and place the pan in the oven.
  8. Bake for 50-60 minutes until a toothpick inserted into the center comes out clean or with moist crumbs and the top is golden brown.
  9. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Use very ripe bananas with brown spots for maximum sweetness and moisture. Do not overmix the batter to avoid a dense texture. If bananas aren’t ripe enough, bake them in their skins at 300°F for 15-20 minutes until black. For a dairy-free version, substitute butter with coconut oil and eggs with a plant-based replacer.
