Ingredients

  • Turkey or ham slices, 4-6 slices per box
  • Cheddar cheese, 1 ounce per box
  • Hard-boiled eggs, 1 per box (optional)
  • Whole wheat crackers, 10-12 per box
  • Pretzel sticks, a small handful per box
  • Mini rice cakes, 2-3 per box
  • Apple slices, half an apple per box
  • Baby carrots, 4-5 per box
  • Grapes, 8-10 per box
  • Yogurt-covered raisins, 1 tablespoon per box
  • Dark chocolate chips, 1 tablespoon per box
  • Freeze-dried strawberries, a small handful per box

Instructions

  1. Start with the protein: Cut turkey or ham slices into fun shapes using cookie cutters, or roll into pinwheels. Place in the largest compartment of the lunch box.
  2. Cut the cheese: Slice block cheddar into 1/4-inch thick pieces, then use cookie cutters to make shapes. Place in a separate compartment.
  3. Prepare the fruits and veggies: Slice apple into wedges, toss with lemon juice to prevent browning. Wash and halve grapes lengthwise. Place apple wedges and grapes in one compartment, baby carrots in another.
  4. Portion the crunchy items: Count out 10-12 whole wheat crackers and a small handful of pretzel sticks. Place in a dry compartment, preferably with a silicone cup underneath.
  5. Add the sweet treat: Measure out 1 tablespoon yogurt-covered raisins and 1 tablespoon dark chocolate chips. Place in a small silicone cup or corner compartment. Add freeze-dried strawberries on top.
  6. Slice the hard-boiled egg (optional): Use an egg slicer to make even slices. Arrange in a small compartment and sprinkle with a tiny pinch of salt.
  7. Add the finishing touches: Check that everything is secure and the lid closes properly. If packing for later, place an ice pack on top to keep cheese and meat cold.

Notes
