Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking pan lightly with butter or non-stick spray.
  2. In a large bowl, combine the sliced peaches, granulated sugar, lemon juice, cinnamon, and 2 tablespoons of the all-purpose flour. Gently toss to coat the peaches evenly without mashing them.
  3. In a separate bowl, mix the remaining flour, rolled oats, brown sugar, and salt. Add the cold butter cubes and vanilla extract. Use a pastry cutter or your fingers to work the butter into the mixture until it resembles coarse crumbs with some pea-sized bits.
  4. Spread the peach filling evenly into the prepared pan. Sprinkle the oat crumble topping over the peaches in an even layer without packing it down.
  5. Bake for 40-45 minutes, or until the topping is golden brown and the peach filling is bubbling at the edges. Check after 35 minutes to prevent over-browning and tent with foil if needed.
  6. Let the bars cool completely in the pan on a wire rack for at least 30 minutes before slicing into approximately 12 bars.
