Ingredients

Scale
  • 3 ripe avocados, peeled and pitted
  • 1 small lime, juiced
  • 1/4 cup finely chopped red onion
  • 1 small clove garlic, minced (optional)
  • Salt and pepper to taste
  • 1 can (15 oz) refried beans
  • 1 teaspoon ground cumin
  • 1 cup sour cream or Greek yogurt
  • 1 teaspoon taco seasoning mix
  • 1 cup chunky salsa
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup chopped fresh tomatoes or cherry tomatoes
  • 1/4 cup sliced black olives (optional)
  • 2 tablespoons chopped fresh cilantro
  • 1 small jalapeño, thinly sliced (optional)

Instructions

  1. Prepare the guacamole: In a mixing bowl, mash the avocados with lime juice using a fork or masher until creamy but slightly chunky. Stir in red onion, garlic, salt, and pepper. Adjust seasoning as needed. (About 5 minutes)
  2. Season the refried beans: In a small bowl, mix refried beans with ground cumin. Set aside.
  3. Mix the sour cream layer: Combine sour cream (or Greek yogurt) with taco seasoning in a small bowl and stir until blended.
  4. Assemble the layers: Spread refried beans evenly in the bottom of a serving dish. Spoon guacamole over beans and smooth gently. Spread sour cream mixture over guacamole.
  5. Add salsa and cheese: Spoon chunky salsa evenly over sour cream layer. Sprinkle shredded cheddar cheese on top.
  6. Top with fresh ingredients: Scatter chopped tomatoes, sliced olives, cilantro, and jalapeño slices evenly over cheese.
  7. Chill and serve: Cover dish with plastic wrap and refrigerate at least 30 minutes to let flavors meld. Serve chilled or at room temperature with tortilla chips.

Notes

For best flavor, chill dip for at least 30 minutes before serving. Use lime juice to prevent guacamole browning. Assemble layers gently to keep distinct. Use sturdy corn tortilla chips for serving. Can be made dairy-free or vegan by substituting sour cream and cheese. Prepare beans and sour cream layers ahead to save time.
