A simple, healthy, and flavorful weeknight dinner featuring wild-caught salmon and fresh asparagus roasted on a single sheet pan with lemon, garlic, and Dijon mustard.

  • 1.5 lbs salmon fillets
  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 1 bunch asparagus spears, woody ends trimmed
  • 1 tablespoon butter, melted
  • Zest of 1 lemon
  • Pinch of red pepper flakes (optional)
  • Juice of 1 lemon (fresh)
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Pat salmon fillets dry with paper towels and place on a parchment-lined sheet pan. Season with salt and pepper.
  3. In a small bowl, mix olive oil, minced garlic, and Dijon mustard. Brush this mixture generously over the top of each salmon fillet.
  4. Trim woody ends from asparagus spears. Toss with melted butter, lemon zest, salt, pepper, and red pepper flakes.
  5. Spread asparagus around the salmon on the sheet pan, ensuring they are not crowded.
  6. Bake in the center rack for 12-15 minutes, or until salmon flakes easily with a fork but remains slightly translucent in the center.
  7. Remove from oven and immediately squeeze fresh lemon juice over the salmon and asparagus.
  8. Sprinkle with chopped parsley and let rest for 2 minutes before serving.

Notes

Start with a cold pan to help salmon cook evenly. Add lemon juice after baking to keep it bright. Do not overcrowd the asparagus. Salmon is done at 125°F for medium-rare or 145°F for well-done. Leftovers keep in the fridge for 2 days.
