  • ¼ cup fresh parsley, chopped (optional, for garnish)

  • ¼ cup grated Parmesan cheese (optional)
  • Pinch of red pepper flakes (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prep your vegetables: cut bell peppers into 1-inch chunks, onion into wedges, zucchini into half-moons, and broccoli into bite-sized florets.
  3. Slice the sausage into ½-inch rounds on a slight diagonal or straight.
  4. In a large bowl, combine sausage, all chopped veggies, olive oil, oregano, thyme, garlic powder, smoked paprika, and a good pinch of salt and pepper. Toss everything together with your hands to coat evenly.
  5. Spread the mixture onto a large rimmed sheet pan in a single layer, leaving space between pieces.
  6. Roast for 20-25 minutes, flipping halfway through with a spatula or shaking the pan, until sausage is browned and veggies are tender with crispy edges.
  7. Check for doneness: sausage should be heated through with caramelization, veggies fork-tender with golden-brown spots. For extra browning, broil 1-2 minutes, watching carefully.
  8. Let the pan rest for 2 minutes before serving.
  9. Garnish with fresh parsley, squeeze lemon juice over the top, and add Parmesan or red pepper flakes if desired. Serve straight from the pan.
