Ingredients

Scale
  • 1 pound ground beef (or ground turkey/chicken for a lighter option)
  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon smoked paprika (optional)
  • Salt and freshly ground black pepper, to taste
  • 8 small corn or flour tortillas (about 6 inches diameter)
  • 1 cup shredded lettuce (romaine or iceberg)
  • 1 medium tomato, diced (or cherry tomatoes halved)
  • 1/2 cup shredded sharp cheddar cheese (or Mexican blend cheese)
  • 1/4 cup fresh cilantro, chopped
  • 1 small red onion, thinly sliced (optional)
  • 1 lime, cut into wedges
  • Optional extras: 1/2 cup sour cream or Greek yogurt, fresh jalapeño slices, guacamole or sliced avocado

Instructions

  1. Finely chop the onion, mince garlic, dice the tomatoes, shred the cheese, and chop cilantro. Prepare all toppings and ingredients before cooking.
  2. Heat 1 tablespoon olive oil in a large skillet over medium heat. Add chopped onion and cook until soft and translucent, about 3-4 minutes.
  3. Add minced garlic and cook for another 30 seconds until fragrant.
  4. Add 1 pound ground beef. Cook, stirring frequently and breaking up lumps, until browned and cooked through, about 7-8 minutes.
  5. Season the meat with 1 teaspoon chili powder, 1/2 teaspoon cumin, 1/2 teaspoon smoked paprika (if using), salt, and pepper to taste. Stir and cook for another 2 minutes.
  6. Warm tortillas in a dry skillet over medium heat for about 30 seconds per side until soft and pliable. Keep warm wrapped in a clean kitchen towel.
  7. Assemble tacos by spooning meat mixture onto each tortilla. Top with shredded lettuce, diced tomatoes, shredded cheese, chopped cilantro, and sliced red onions if using. Squeeze fresh lime juice over the top.
  8. Add optional extras like sour cream or Greek yogurt, jalapeño slices, or guacamole if desired. Serve immediately.

Notes

If the meat feels dry, add a splash of water or a drizzle of olive oil while cooking to keep it juicy. Warm tortillas gently to avoid brittleness. Prep toppings ahead to save time. Cook meat in batches if needed to avoid steaming. Season gradually to avoid overpowering flavors.
