Easy Slow Cooker Christmas Morning Casserole

A stress-free, set-and-forget holiday brunch dish that combines day-old bread and cinnamon rolls with a rich egg custard, cooked slowly in a slow cooker for a moist, indulgent breakfast.

  • 1 package (approx. 12-16 rolls) refrigerated cinnamon rolls
  • 1 loaf day-old French bread or Italian bread, torn into 1-inch chunks
  • 8 large eggs, room temperature
  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup brown sugar, packed (optional topping)
  • 2 tablespoons butter, melted (optional topping)
  • 1/4 cup chopped pecans or walnuts (optional topping)

Instructions

  1. Tear the day-old bread into rough 1-inch chunks and place them in the bottom of a greased 4-6 quart slow cooker.
  2. If using large cinnamon rolls, tear them in half; if small, leave whole. Distribute evenly over the bread.
  3. In a large bowl, whisk together eggs, milk, heavy cream, vanilla extract, cinnamon, nutmeg, and salt until smooth and slightly frothy.
  4. Pour the custard mixture evenly over the bread and cinnamon rolls.
  5. Gently press down on the bread and rolls with a spatula to ensure they are submerged in the liquid.
  6. If using toppings, sprinkle brown sugar, melted butter, and nuts evenly over the top.
  7. Cover and cook on LOW for 6 to 8 hours, or on HIGH for 3-4 hours, until the eggs are set and a knife inserted into the center comes out clean.
  8. Let the casserole sit for 5-10 minutes after turning off the slow cooker to allow the custard to settle before serving.

Notes

For best results, use day-old bread as it absorbs liquid better without turning to mush. If making the night before, cover tightly with plastic wrap before the lid to prevent condensation. Do not stir while cooking. For a savory version, omit cinnamon rolls and sugar, adding ham, bacon, and cheese instead.
