  • 46 no-boil lasagna noodles (cut to fit toaster oven dish)

Instructions

  1. Preheat your toaster oven to 375°F (190°C).
  2. In a skillet over medium heat, brown ½ lb ground beef or Italian sausage, breaking it up as it cooks (about 5-7 minutes). Drain excess fat.
  3. Add chopped onion and minced garlic to the skillet and cook until softened (about 3 minutes).
  4. Stir in marinara sauce and Italian seasoning. Let simmer for 5 minutes. Season with salt and pepper.
  5. In a bowl, combine ricotta cheese, ½ cup shredded mozzarella, and Parmesan cheese. Add a pinch of salt and pepper and stir gently until blended.
  6. Assemble the lasagna by placing a thin layer of meat sauce at the bottom of your toaster oven-safe baking dish.
  7. Lay down 2-3 lasagna noodles trimmed to fit the dish.
  8. Spread half the cheese mixture evenly over the noodles, then top with another layer of sauce.
  9. Repeat layers ending with sauce on top. Sprinkle remaining mozzarella over the final layer.
