  • 4 ounces (115 grams) thinly sliced smoked salmon
  • 4 ounces (115 grams) full-fat cream cheese, softened to room temperature
  • Zest of half a lemon
  • 1 tablespoon fresh dill, finely chopped
  • 1 tablespoon capers, drained (optional)
  • Salt and pepper, to taste
  • Olive oil, for drizzling (optional)

Instructions

  1. Rinse the cucumber thoroughly and pat dry. Slice into 1/4 inch (6 mm) thick rounds using a sharp knife. Lay them out on a paper towel-lined plate to absorb excess moisture for about 5 minutes.
  2. In a mixing bowl, combine softened cream cheese with lemon zest, chopped fresh dill, and a pinch of salt and pepper. Mix well until smooth and evenly blended (about 3 minutes).
  3. Spread about 1 teaspoon of the cream cheese mixture evenly on each cucumber slice.
  4. Tear or cut smoked salmon into bite-sized pieces (about 1/2 inch squares) and place one piece atop the cream cheese on each cucumber round. Add a small caper or two on top if desired.
  5. Lightly season with freshly ground black pepper and drizzle a tiny bit of olive oil over the assembled rounds if desired.
  6. Arrange the rounds on a serving platter and chill for 10-15 minutes before serving to meld flavors and keep cucumber crisp.

Notes

If cucumbers seem watery, lightly salt slices and let rest for 10 minutes, then pat dry before assembly. Soften cream cheese at room temperature for easier mixing. Prepare cucumber slices and cream cheese mixture ahead, but add smoked salmon just before serving to keep freshness. Use English cucumbers for best texture. Variations include swapping dill for parsley or basil, adding wasabi mayo for heat, or using smoked trout or cured ham instead of salmon.
