These grilled honey BBQ chicken skewers with star cut peppers offer a perfect balance of sweet and smoky flavors, ideal for quick weeknight dinners or backyard cookouts. The star cut peppers add a unique mild heat and crunch that complements the juicy chicken thighs glazed with a rich honey BBQ marinade.

Ingredients

Scale
  • 1.5 pounds boneless, skinless chicken thighs, cut into 1.5-inch pieces
  • 810 star cut peppers, fresh or frozen
  • Wooden or metal skewers (if wooden, soak in water 30 minutes before grilling)
  • 1/3 cup honey
  • 1/3 cup BBQ sauce (smoky, medium-spicy)
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and freshly ground black pepper to taste

Instructions

  1. Rinse and pat dry the chicken thighs, then cut into uniform 1.5-inch pieces. Wash and dry fresh star cut peppers or thaw and pat dry if frozen.
  2. In a medium bowl, whisk together honey, BBQ sauce, olive oil, apple cider vinegar, smoked paprika, garlic powder, salt, and black pepper until smooth.
  3. Add the chicken pieces to the marinade, toss well to coat, cover, and refrigerate for 30 minutes to 2 hours.
  4. Alternate threading chicken pieces and star cut peppers onto the skewers, starting and ending with chicken.
  5. Preheat grill to medium-high heat (around 375°F). Oil the grates lightly to prevent sticking.
  6. Grill skewers for 4-5 minutes per side, turning carefully with tongs. Brush with leftover marinade halfway through grilling. Cook until chicken reaches 165°F internal temperature.
  7. Transfer skewers to a platter and let rest for 5 minutes before serving.

Notes

Soak wooden skewers in water for 30 minutes before grilling to prevent burning. Do not marinate chicken overnight to avoid mushy texture. Use a meat thermometer to ensure chicken reaches 165°F. Brush extra marinade during grilling for a caramelized glaze but avoid flare-ups. Let skewers rest 5 minutes after grilling to lock in juices. Substitute chicken breasts carefully to avoid drying out. Star cut peppers can be replaced with mini sweet peppers or bell peppers.
