Flavorful Grilled Nectarine and Caramelised Onion Flatbread Pizza

A quick and easy grilled flatbread pizza topped with juicy grilled nectarines, sweet caramelised onions, and creamy goat cheese, perfect for summer entertaining.

  • 2 large flatbreads (810 inches each, store-bought or homemade)
  • 2 ripe nectarines, halved and pitted
  • 2 large yellow onions, thinly sliced
  • 3 tablespoons extra virgin olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme, chopped (or ½ teaspoon dried thyme)
  • 4 ounces goat cheese, crumbled (optional)
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste
  • 1 teaspoon honey or maple syrup (optional)

Instructions

  1. Caramelise the onions: Heat 2 tablespoons olive oil over medium-low heat in a skillet. Add sliced onions and a pinch of salt. Stir occasionally until golden brown, about 20 minutes. Add a splash of water if onions stick. Stir in minced garlic and thyme, cook another 5-10 minutes until deeply caramelised. Set aside.
  2. Prepare nectarines for grilling: Brush nectarine halves with olive oil and honey or maple syrup if using.
  3. Grill nectarines: Preheat grill or grill pan to medium-high. Grill nectarines cut side down for 3-4 minutes per side until grill marks appear and fruit softens. Remove and slice into thin wedges.
  4. Grill flatbreads: Brush flatbreads lightly with olive oil. Grill for 3-4 minutes until charred and warmed through. Remove from grill.
  5. Assemble pizza: Spread caramelised onions evenly over each flatbread. Arrange grilled nectarine slices on top. Crumble goat cheese over the flatbread. Season with salt and pepper.
  6. Final grill (optional): Return assembled flatbreads to grill for 1-2 minutes to warm cheese slightly, watching carefully to prevent burning.
  7. Serve: Drizzle balsamic vinegar over pizzas just before serving. Garnish with extra thyme if desired.

Notes

If you don’t have a grill, use a broiler or grill pan on the stovetop. Keep the grill temperature moderate to avoid burning. For a vegan version, substitute goat cheese with plant-based cheese or omit it. Use indirect heat on the grill to prevent flatbreads from burning. Reheat leftovers in a skillet or oven to keep crust crisp.
