A vibrant and flavorful hummus board topped with crispy za’atar-coated chickpeas, fresh veggies, and crunchy nuts, perfect for summer gatherings and poolside snacking.

Ingredients

  • 1 can (15 oz / 425 g) chickpeas, drained and rinsed (for hummus base)
  • 1/4 cup (60 ml) tahini
  • 3 tablespoons (45 ml) fresh lemon juice (about one large lemon)
  • 2 cloves garlic, minced
  • 1/4 cup (60 ml) extra virgin olive oil, plus more for drizzling
  • 1/2 teaspoon ground cumin
  • Salt to taste (start with 1/2 teaspoon)
  • 23 tablespoons (30–45 ml) cold water, to adjust consistency
  • 1 can (15 oz / 425 g) chickpeas, drained and rinsed (for za’atar chickpeas)
  • 1 tablespoon za’atar spice blend
  • 1 tablespoon olive oil
  • Pinch of salt
  • 1/4 cup (35 g) chopped fresh parsley
  • 1/4 cup (35 g) sliced cucumber
  • 1/4 cup (35 g) cherry tomatoes, halved
  • 1/4 cup (35 g) pomegranate seeds (optional)
  • Toasted pine nuts or chopped pistachios (for crunch)
  • Pita chips or warm pita bread, for serving

Instructions

  1. Preheat oven to 400°F (200°C). Pat the chickpeas dry thoroughly using a clean kitchen towel or paper towels.
  2. Toss the chickpeas in olive oil, za’atar, and a pinch of salt until evenly coated.
  3. Spread chickpeas in a single layer on a baking sheet and roast for 15-20 minutes, shaking the pan halfway through to ensure even crisping. Remove when golden and crunchy.
  4. In a food processor, combine drained chickpeas, tahini, lemon juice, garlic, cumin, and salt. Pulse to combine.
  5. Slowly drizzle in olive oil while blending. Add cold water a tablespoon at a time until smooth and creamy. Adjust salt or lemon juice to taste.
  6. Spread hummus generously over a serving platter or board, leaving space around edges.
  7. Scatter roasted za’atar chickpeas over the hummus.
  8. Add chopped parsley, cucumber slices, cherry tomatoes, pomegranate seeds, and nuts on top.
  9. Drizzle extra olive oil over everything for shine and flavor.
  10. Arrange pita chips or warm pita wedges around the board for dipping and serve.

Notes

Dry chickpeas thoroughly before roasting to ensure crispiness. Use room temperature ingredients for smoother hummus. Roast chickpeas separately to maintain texture contrast. Assemble board just before serving for freshness. Store hummus and chickpeas separately if prepping ahead.
