Instructions

  1. In a large bowl, whisk together the flour, baking powder, sugar, and salt until evenly combined.
  2. In a separate bowl, whisk the milk, egg, melted butter, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry ingredients and gently fold with a spatula just until combined. The batter should be slightly lumpy.
  4. Preheat a non-stick skillet or griddle over medium heat for 3-4 minutes. Lightly grease with butter or oil using a paper towel.
  5. Pour about ¼ cup (60ml) batter per pancake onto the hot surface. Cook until bubbles form on the surface and edges look set, about 2-3 minutes.
  6. Carefully flip each pancake and cook the other side for another 1-2 minutes until golden brown.
  7. Serve immediately stacked and topped with your favorite toppings or keep warm in a low oven (200°F/95°C) while finishing the batch.
