  • 2 tablespoons whole milk (30 ml)
  • 1 tablespoon unsalted butter (14 grams)
  • Pinch of salt (preferably fine sea salt)
  • Freshly ground black pepper (optional)
  • Fresh chives or parsley, chopped (optional)

Instructions

  1. Crack the eggs into your mixing bowl. Add the whole milk and a pinch of salt. Whisk vigorously until the mixture is smooth and a bit frothy, about 30 seconds.
  2. Heat the skillet over low to medium-low heat. Add the tablespoon of butter and let it melt slowly, coating the pan evenly. Watch closely—if the butter starts to brown, turn the heat down.
  3. Pour the egg mixture into the pan. Let it sit undisturbed for about 20 seconds until the edges just begin to set.
  4. Gently stir the eggs with your rubber spatula, pushing from the edges toward the center. Continue stirring slowly and gently.
  5. Cook for 2–3 minutes, stirring occasionally. The eggs should look softly set but still slightly runny.
  6. Remove from heat just before they look fully cooked. Season with more salt if needed and freshly ground black pepper.
  7. Serve immediately, garnished with chopped chives or parsley if desired.

Notes

Use room temperature eggs for better blending and even cooking. Cook eggs on low heat and stir gently to avoid rubbery texture. If storing leftovers, refrigerate in an airtight container for up to 2 days and reheat gently on the stove.
