  • 4 ears fresh corn on the cob, husks removed
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 medium red bell pepper, finely diced
  • ½ small red onion, finely chopped
  • ½ cup fresh cilantro, chopped (optional)
  • 1 small jalapeño, seeded and minced
  • 2 tablespoons fresh lime juice
  • 1 tablespoon olive oil
  • ½ teaspoon ground cumin
  • Salt and pepper to taste

Instructions

  1. Preheat your grill or grill pan to medium-high heat (about 375°F). Let it heat for about 5 minutes to create grill marks.
  2. Remove husks and silk from each ear of corn. Lightly brush the corn with olive oil to prevent sticking and help with charring.
  3. Grill the corn directly on the grill grates or pan, turning every 2-3 minutes until all sides have char marks and kernels are tender, about 10-12 minutes total.
  4. Let the grilled corn cool for a few minutes. Then, standing ears upright, slice kernels off the cob into a large mixing bowl.
  5. Add the rinsed black beans, diced red bell pepper, chopped red onion, minced jalapeño, and chopped cilantro to the bowl with corn.
  6. Drizzle olive oil and squeeze fresh lime juice over the mixture. Sprinkle ground cumin, salt, and pepper. Toss gently to combine all flavors evenly.
  7. Taste and adjust seasoning with more lime juice or salt if needed. Let the salsa sit for 10 minutes to meld flavors, or serve immediately.

Notes

Rinse canned black beans thoroughly to reduce metallic taste and excess sodium. Use fresh lime juice for best flavor. Letting the salsa rest for 10 minutes enhances the flavor meld. If no grill is available, a cast-iron skillet or broiler can be used to char the corn. Adjust jalapeño quantity to control heat level.
