  • 45 ripe Roma tomatoes, finely diced
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil leaves, thinly sliced
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar (optional)
  • Salt and freshly ground black pepper, to taste
  • 1 baguette or rustic Italian bread, sliced about 1/2-inch thick
  • 2 tbsp extra virgin olive oil, for brushing
  • 2 cloves garlic, peeled (to rub on crostini after toasting)

Instructions

  1. Prepare the Tomato Mixture (10 minutes): Wash and finely dice tomatoes. In a mixing bowl, combine diced tomatoes, minced garlic, sliced basil, olive oil, and balsamic vinegar if using. Season with salt and pepper. Stir gently and let sit.
  2. Slice the Bread (5 minutes): Slice baguette into 1/2-inch thick pieces. Let sit if fresh to dry slightly.
  3. Toast the Crostini (10-15 minutes): Preheat oven to 375°F (190°C). Arrange bread slices on a baking sheet. Brush both sides with olive oil. Toast for 10-15 minutes, flipping halfway, until golden and crispy.
  4. Rub with Garlic (2 minutes): While crostini are warm, rub peeled garlic cloves over each slice to infuse flavor.
  5. Assemble the Bruschetta (5 minutes): Spoon tomato mixture generously onto each crostini. Arrange on a platter and optionally drizzle with more olive oil and garnish with extra basil.

Notes

Drain excess tomato juice to prevent soggy crostini. Assemble just before serving to maintain crispness. You can grill bread instead of oven toasting for a smoky flavor. Use gluten-free bread for a gluten-free version. Fresh basil is preferred but dried oregano can be substituted.
