A quick and easy breakfast bowl featuring honey roasted peaches, creamy Greek yogurt, and crunchy granola for a fresh, sweet, and indulgent start to your day.

  • 3 ripe peaches, halved and pitted
  • 3 tablespoons honey (preferably raw or wildflower)
  • 2 cups thick and creamy Greek yogurt (plain or vanilla)
  • 1 cup crunchy granola (store-bought or homemade)
  • 1/2 teaspoon ground cinnamon (optional)
  • 1 teaspoon vanilla extract (optional)
  • 1 teaspoon fresh lemon juice
  • 1 tablespoon olive oil or butter, for brushing peaches

Instructions

  1. Preheat your oven to 400ยฐF (200ยฐC).
  2. Rinse and dry the peaches, then cut them in half and remove the pits.
  3. In a mixing bowl, combine honey, fresh lemon juice, and ground cinnamon if using.
  4. Toss the peach halves in the honey mixture to coat thoroughly.
  5. Place peaches cut side up on a parchment-lined baking sheet and brush lightly with olive oil or melted butter.
  6. Roast the peaches in the oven for 15 to 20 minutes until tender with caramelized edges.
  7. While peaches roast, stir vanilla extract into the Greek yogurt until smooth (optional).
  8. Spoon the vanilla yogurt into serving bowls.
  9. Arrange the warm honey roasted peaches on top, cut side up.
  10. Sprinkle granola generously over the peaches and yogurt.
  11. Serve immediately while peaches are warm and granola is crisp.

Notes

Choose firm but ripe peaches to avoid mushiness. Add granola just before serving to keep it crunchy. Use thick Greek yogurt for best texture. For dairy-free, use coconut or almond milk yogurt and swap honey with maple syrup. Roasting with skin on adds texture but peeling is optional.
