A quick and easy patriotic dessert featuring layers of strawberry Jello, whipped cream, and fresh blueberries, perfect for summer celebrations.

  • 1 package (3 oz / 85g) strawberry-flavored gelatin
  • 1 cup boiling water (240 ml)
  • 1 cup cold water (240 ml)
  • 1 cup heavy whipping cream (240 ml), chilled
  • 2 tablespoons powdered sugar
  • 1 teaspoon pure vanilla extract
  • 1 cup fresh blueberries (about 150g), washed and patted dry
  • Optional: Mint leaves for garnish
  • Optional: Extra whipped cream swirls
  • Optional: Sprinkle of crushed graham crackers

Instructions

  1. Prepare the Strawberry Jello: In a medium bowl, pour 1 cup boiling water over the strawberry gelatin powder. Stir for about 2 minutes until completely dissolved. Add 1 cup cold water and mix well. Let it cool slightly, about 10 minutes, but don’t let it start setting yet.
  2. Assemble the Red Layer: Pour a thin layer (about 1/3 cup or 80 ml) of the cooled gelatin into each parfait cup, spreading evenly. Transfer cups to the refrigerator and chill for 30 minutes or until the layer is firm but not rock solid.
  3. Whip the Cream: While the red layer chills, combine heavy cream, powdered sugar, and vanilla extract in a chilled bowl. Whip on medium-high speed until soft peaks form (about 3-4 minutes). Be careful not to overwhip.
  4. Add the White Layer: Gently spoon or pipe the whipped cream over the set red gelatin layer, filling another 1/3 of the cup. Smooth the top with a spatula. Return to the fridge for 15 minutes to firm up slightly.
  5. Top with Blueberries: Add fresh blueberries to fill the remaining space in each cup. Press lightly so they nestle into the whipped cream but remain whole and visually distinct.
  6. Final Chill: Refrigerate parfait cups for at least 1 hour before serving to let flavors meld and layers set perfectly. Best enjoyed within 24 hours.

Notes

Let each layer chill until almost firm to prevent colors from blending. Use soft peaks for whipped cream to keep parfait light and airy. If gelatin sets too quickly, warm gently over a double boiler to loosen. For dairy-free option, substitute heavy cream with chilled coconut cream. Use fresh or thawed and drained frozen blueberries.
