A fresh, easy, and healthy snack featuring mini Caprese skewers with cherry tomatoes, mozzarella, basil, and whole wheat crackers, drizzled with balsamic glaze. Perfect for on-the-go snacking or light meals.

  • 20 cherry tomatoes, washed and halved if large
  • 20 small fresh mozzarella balls (bocconcini), drained
  • 20 fresh basil leaves, washed and patted dry
  • About 40 whole wheat crackers
  • 2 tablespoons balsamic glaze
  • 1 tablespoon extra virgin olive oil (optional)
  • Sea salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Prepare the ingredients: Rinse cherry tomatoes and slice large ones in half. Drain mozzarella balls and pat dry with paper towels. Gently wash basil leaves and dry completely to prevent sogginess.
  2. Season the tomatoes: Place tomatoes in a small bowl, drizzle with 1 tablespoon olive oil, sprinkle with a pinch of sea salt and black pepper, and toss gently to coat.
  3. Assemble the mini Caprese skewers: Thread one cherry tomato half (or whole if small), one basil leaf (fold if large), and one mozzarella ball onto each skewer. Repeat until all ingredients are used.
  4. Arrange the skewers neatly in one compartment of your bento box or container, ensuring they don’t crowd each other to avoid squishing the basil.
  5. Fill the adjacent compartment(s) with whole wheat crackers, keeping them separate from any moist ingredients to stay crisp.
  6. Just before serving, lightly drizzle the balsamic glaze over the skewers. If packing for later, keep glaze separate to add on-site.
  7. Optionally, add a small container or compartment for extra balsamic glaze or olive oil dip.

Notes

Keep basil leaves dry and fold large leaves gently to prevent tearing. Add balsamic glaze just before serving to avoid sogginess. Store crackers separately to maintain crunch. For vegan version, substitute mozzarella with marinated tofu or vegan cheese balls and use a vegan balsamic glaze.
