  • 3 medium ripe peaches, peeled and diced
  • 12 fresh jalapeños, finely chopped (adjust heat preference; remove seeds for milder salsa)
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped fresh cilantro
  • Juice of 1 lime (about 2 tablespoons)
  • 1 small garlic clove, minced
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil (optional)
  • 1 teaspoon honey or agave (optional)

Instructions

  1. Peel the peaches by scoring an ‘X’ on the bottom, blanching in boiling water for 30 seconds, then transferring to ice water to loosen the skin. Dice into 1/2-inch pieces.
  2. Wear gloves and finely chop jalapeños, removing seeds if less heat is desired.
  3. Finely chop red onion and mince garlic. Set aside.
  4. In a mixing bowl, gently toss diced peaches, jalapeños, red onion, garlic, and cilantro, keeping the salsa chunky.
  5. Add lime juice, salt, olive oil, and honey or agave (if using). Stir gently to combine.
  6. Let the salsa rest for at least 10 minutes to allow flavors to meld. Taste and adjust salt or lime juice as needed.

Notes

Use ripe but firm peaches to avoid mushy salsa. Remove jalapeño seeds for milder heat. Let salsa rest for at least 10 minutes for best flavor. Can substitute serrano or Anaheim peppers for different heat levels. Store refrigerated up to 3 days. Avoid freezing to maintain texture.
