  • 1 teaspoon lime or lemon zest (optional)

Instructions

  1. Chill the whole watermelon in the fridge for at least 2 hours before slicing.
  2. Using a sharp knife, cut the watermelon into 1-inch thick rounds, then cut each round into 6 or 8 wedges like pizza slices (about 10 minutes).
  3. Rinse fresh mint leaves, pat dry, and tear or roughly chop into smaller pieces (2-3 minutes).
  4. Crumble the feta cheese into small chunks or fine pieces.
  5. Arrange watermelon wedges on a serving platter.
  6. Drizzle each slice lightly with extra virgin olive oil.
  7. Sprinkle crumbled feta generously over each watermelon slice, followed by fresh mint pieces.
  8. Season with a pinch or two of flaky sea salt and a light grind of black pepper.
  9. Add optional lime or lemon zest and garnishes like sliced olives, red onion rings, or toasted pine nuts if desired.
  10. Serve immediately for best freshness and flavor. If needed, cover loosely and refrigerate up to 1 hour.
