A quick, colorful, and festive fruit skewer recipe that mimics candy corn using fresh mango, pineapple, strawberries, and mini marshmallows. Perfect for kids’ parties and healthy summer snacks.

Ingredients

  • Ripe mango, peeled and cut into bite-sized chunks (about 1 inch pieces)
  • Fresh pineapple, cored and cut into small cubes (about 1 inch pieces)
  • Strawberries, hulled and halved or quartered depending on size
  • Mini marshmallows (optional, for the white tip of the candy corn effect)
  • Wooden skewers, about 6 inches long

Instructions

  1. Prep the fruit by peeling and dicing the mango into uniform chunks about 1 inch.
  2. Core and cube the pineapple to similar sizes.
  3. Hull and halve or quarter the strawberries depending on their size.
  4. Take a wooden skewer and thread one mango piece first (the bottom orange section), followed by a pineapple cube (the middle yellow section), and finish with a strawberry piece or two (the top red section).
  5. Add a mini marshmallow at the tip to mimic the candy corn’s white end (optional).
  6. Arrange skewers on a serving platter either flat or standing upright in a glass.
  7. Serve fresh within a few hours of assembly for best texture and flavor.

Notes

Use firm, ripe fruit to prevent sogginess. Assemble skewers just before serving or store covered in the fridge and add marshmallows last to keep them from melting. For vegan option, substitute marshmallows with coconut yogurt dollops or white grapes. Keep fruit pieces uniform in size for balanced skewers. If pineapple is too juicy, pat dry before skewering.
