A simple, refreshing summer drink combining sweet watermelon, fresh mint, lime juice, and a touch of sweetener. Perfect for cooling down on warm days or casual gatherings.

Ingredients

Scale
  • 4 cups (600g) seedless watermelon, cubed and chilled
  • 1012 fresh mint leaves, gently bruised
  • Juice of 1 medium lime (about 2 tablespoons or 30ml)
  • 1 to cups (240-360ml) cold water
  • 1 to 2 tablespoons (15-30ml) agave syrup or honey, adjust to taste
  • Ice cubes, as needed for serving

Instructions

  1. Cut about 4 cups (600g) of seedless watermelon into cubes and chill.
  2. Gently bruise 10-12 fresh mint leaves with a wooden spoon or muddler to release oils.
  3. In a blender, combine watermelon cubes, bruised mint leaves, lime juice, and 1 cup (240ml) cold water. Add 1 tablespoon (15ml) of agave syrup or honey.
  4. Blend on medium-high for about 30 seconds until smooth.
  5. Taste and adjust sweetness by adding more sweetener a teaspoon at a time if needed.
  6. If too thick, add up to ½ cup (120ml) more water and blend briefly again.
  7. Optionally strain the mixture through a fine mesh strainer into a pitcher to remove pulp and mint bits.
  8. Add ice cubes to the pitcher or glasses and serve immediately, or refrigerate up to 2 hours for enhanced flavor.

Notes

Use ripe watermelon for best sweetness. Gently bruise mint leaves to avoid bitterness. Straining is optional depending on preferred texture. Adjust sweetness gradually. Serve chilled over ice. Can substitute basil or cilantro for mint. For a sugar-free version, omit sweetener.
