A quick and easy fresh peach salsa with jalapeño and cilantro, perfect for summer gatherings. This vibrant salsa balances sweet peaches with spicy jalapeño and zesty lime juice.

  • 3 medium fresh ripe peaches, peeled and diced
  • 1 small jalapeño pepper, seeded and finely chopped
  • ¼ cup fresh cilantro, chopped
  • ¼ cup red onion, finely diced
  • Juice of 1 lime (about 2 tablespoons)
  • ½ teaspoon salt
  • 1 tablespoon extra virgin olive oil (optional)
  • 1 teaspoon honey or agave syrup (optional)

Instructions

  1. Peel and dice the peaches: blanch peaches in boiling water for 30 seconds, then plunge into ice water for about 10 minutes to loosen the skin. Peel off skins carefully and dice peaches into ½-inch cubes.
  2. Chop the jalapeño: cut in half, remove seeds and membranes for less heat, then finely dice about 1 tablespoon.
  3. Dice the red onion finely to about ¼ cup.
  4. Roughly chop the cilantro leaves and tender stems to get about ¼ cup.
  5. In a medium mixing bowl, gently toss the peaches, jalapeño, red onion, and cilantro together.
  6. Add lime juice, salt, olive oil, and honey (if using). Fold gently to combine without bruising the fruit.
  7. Cover and refrigerate for at least 20 minutes before serving to let flavors meld.

Notes

If peaches aren’t very sweet, add honey or agave syrup to balance heat and acidity. Removing jalapeño seeds reduces heat. Let salsa rest refrigerated for at least 20 minutes for best flavor. Peeling peaches is optional if short on time.
