Ingredients

  • 3 medium ripe peaches, peeled and diced
  • 1 medium jalapeño, seeded and finely chopped (seeds optional for heat)
  • 1/4 cup finely diced red onion
  • 1/4 cup fresh cilantro leaves, chopped
  • Juice of 1 lime
  • 1/2 teaspoon salt
  • 1 teaspoon honey or agave syrup (optional)
  • Optional add-ins: pinch of smoked paprika, diced cucumber, or bell pepper

Instructions

  1. Wash peaches and peel skin off in thin strips using a paring knife.
  2. Dice peeled peaches into roughly 1/2-inch cubes.
  3. Slice jalapeño in half lengthwise and remove seeds if milder heat is desired. Finely mince the jalapeño.
  4. Finely dice the red onion.
  5. Rinse cilantro leaves, pat dry, remove stems, and chop finely.
  6. In a mixing bowl, combine diced peaches, jalapeño, red onion, and cilantro. Toss gently to mix without mashing peaches.
  7. Add lime juice, salt, and honey or agave syrup if using. Toss gently again.
  8. Let salsa rest at room temperature for at least 15 minutes before serving to allow flavors to meld.

Notes

Use ripe but firm peaches to avoid mushy salsa. Peel peaches with a paring knife for best results. Adjust jalapeño seeds to control heat. Let salsa rest for at least 15 minutes before serving. Can be made up to 4 hours ahead and refrigerated. Bring to room temperature before serving.
