Ingredients

Scale
  • 1 lb ground beef (80/20)
  • 1/2 lb ground pork
  • 1 cup breadcrumbs (plain or panko)
  • 1/2 cup milk (whole or 2%)
  • 1 large egg (beaten)
  • 1/2 cup ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup finely grated Parmesan cheese (optional)
  • 810 strips of bacon (thin-cut) OR 1 sheet of puff pastry (thawed)
  • 2 candy eyes (or 2 slices of black olive)
  • 2 tbsp ketchup (for glaze)
  • Dash of Worcestershire sauce (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Line your loaf pan with parchment paper, leaving some overhang on the sides.
  2. In a small bowl, combine the breadcrumbs and milk. Let it sit for 5 minutes until the breadcrumbs absorb the liquid and become a paste.
  3. In a large mixing bowl, combine the ground beef, ground pork, soaked breadcrumbs, beaten egg, ketchup, Worcestershire sauce, smoked paprika, garlic powder, onion powder, salt, pepper, and Parmesan cheese (if using). Use your hands to gently mix everything together until just combined (about 30 seconds).
  4. Transfer the meat mixture to the lined loaf pan. Press it down evenly, making sure there are no air pockets. Smooth the top.
  5. Place the loaf pan in the refrigerator for 15 minutes to firm up the meatloaf.
  6. Remove the pan from the fridge. If using bacon, lay the strips across the top of the meatloaf, slightly overlapping them. Start from one end and work your way to the other, leaving a small gap near the top for the eyes. If using puff pastry, cut the thawed sheet into 1-inch wide strips and lay them across the top in the same overlapping pattern.
  7. Place the candy eyes (or olive slices) in the gap you left near the top of the meatloaf. Press them in gently.
  8. In a small bowl, mix the 2 tablespoons of ketchup with a dash of Worcestershire sauce. Use a pastry brush to lightly coat the exposed meatloaf (the area around the eyes) and the edges of the bacon or puff pastry.
  9. Place the loaf pan on a baking sheet to catch any drips. Bake for 40-45 minutes, or until the internal temperature reaches 160°F (71°C). If the bacon isn’t crispy enough, broil for 1-2 minutes at the end.
  10. Let the meatloaf rest in the pan for 10 minutes. Then, using the parchment paper, lift the meatloaf out of the pan and transfer it to a cutting board or serving platter.
  11. If the eyes shifted during baking, adjust them now. Slice carefully between the bandages to serve.

Notes

Don’t skip the chill step—it helps the bandages stay put. If using thick-cut bacon, cover the loaf with foil for the first 30 minutes to prevent burning. Overlap the bandages by about half an inch. For a vegetarian version, use plant-based ground meat and puff pastry strips.
