  • ½ cup (115g) unsalted butter, softened
  • 3 cups (360g) powdered sugar, sifted
  • 2 tbsp black sesame paste (optional)
  • 1 tsp vanilla extract
  • 23 tbsp heavy cream

Instructions

  1. Grease and line two 8-inch cake pans with parchment paper. Preheat oven to 350°F (175°C).
  2. Toast black sesame seeds in a dry skillet over medium heat for 3 minutes, stirring constantly until fragrant. Let cool, then grind finely.
  3. In a large bowl, sift together flour, baking powder, baking soda, salt, and ground black sesame powder. Whisk to combine.
  4. In a separate bowl, beat eggs lightly. Add granulated sugar and mix until slightly thickened. Stir in buttermilk, melted butter, and vanilla extract until smooth.
  5. Slowly add dry ingredients into wet mixture, folding with a spatula until just combined. Batter should be thick but pourable.
  6. Divide batter unevenly into two bowls—about two-thirds in one, one-third in the other. Leave larger portion plain, add an extra tablespoon black sesame powder to smaller portion for darker swirl. Drop spoonfuls alternately into pans, then swirl gently with a skewer or knife.
  7. Bake for 30-35 minutes or until a toothpick inserted in center comes out clean. Watch for color; black sesame may darken quickly.
  8. Cool cakes in pans for 10 minutes, then turn out onto wire racks to cool completely before frosting.
  9. Beat cream cheese and softened butter until creamy. Gradually add powdered sugar, then stir in black sesame paste and vanilla extract. Adjust consistency with heavy cream until spreadable but firm.
  10. Assemble cake by placing one layer on serving plate, spreading frosting generously on top. Add second layer, then frost top and sides evenly. Use offset spatula to create gentle waves mimicking galaxy theme.

Notes

Toast black sesame seeds fresh each time for best flavor and grind finely to avoid texture issues. Use room temperature ingredients for even mixing. When swirling batter, use a gentle motion to maintain galaxy effect. Chill frosting if too soft before spreading.
