Ingredients

Scale
  • 2 cups Old-Fashioned Rolled Oats
  • 1 cup Pumpkin Puree (100% pure, not pie filling)
  • 2 large Eggs (room temperature)
  • 1/2 cup Milk (dairy or plant-based like almond, oat, or coconut)
  • 1/4 cup Maple Syrup (or honey)
  • 2 tablespoons Neutral Oil (coconut, avocado, or light olive oil)
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Ginger
  • 1/4 teaspoon Nutmeg
  • 1 teaspoon Vanilla Extract
  • 1/2 teaspoon Salt
  • Optional: 1/4 cup Chopped Walnuts or Pecans
  • Optional: 2 tablespoons Dark Chocolate Chips
  • Optional: 1 tablespoon Chia Seeds

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or silicone cups.
  2. In a large mixing bowl, whisk together the eggs, pumpkin puree, milk, maple syrup, and neutral oil until smooth.
  3. Add the rolled oats, cinnamon, ginger, nutmeg, and salt to the wet mixture. Stir until the oats are fully coated.
  4. Let the mixture rest in the bowl for 10 minutes to allow the oats to absorb liquid.
  5. Gently fold in any optional add-ins like walnuts, pecans, or chocolate chips.
  6. Divide the mixture evenly among the 12 muffin cups, pressing down slightly to create a flat top.
  7. Bake for 18-20 minutes, or until edges are golden brown and centers are set (test with a toothpick).
  8. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Do not skip the 10-minute resting step to ensure the oats are tender. Use old-fashioned rolled oats, not quick oats, for the best texture. These freeze well for up to 3 months. Reheat with a splash of milk to maintain moisture.
