This healthy sugar-free pumpkin syrup for coffee takes just five minutes to make and uses real ingredients like pumpkin, spices, and a natural sweetener. It delivers all the cozy fall vibes without the sugar crash, perfect for keto, diabetic, or anyone cutting back on sugar.

Ingredients

Scale
  • 1/2 cup canned pumpkin puree (100% pure pumpkin, not pumpkin pie filling)
  • 1 cup water (filtered preferred)
  • 1/4 cup granulated sweetener of choice (allulose, monk fruit, or erythritol)
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract (pure vanilla extract)
  • 1/4 teaspoon salt
  • Optional: 1/2 teaspoon cinnamon (for extra warmth)

Instructions

  1. Combine the base: In a small saucepan, whisk together the pumpkin puree and water until smooth.
  2. Add the sweetener: Stir in your granulated sweetener of choice. Whisk until dissolved.
  3. Incorporate the spices: Add the pumpkin pie spice, vanilla extract, and salt. Whisk continuously for about 2 minutes over medium heat until tiny bubbles form around the edges and the kitchen smells like autumn.
  4. Simmer gently: Reduce heat to low and let it simmer for 2-3 minutes, stirring occasionally. The mixture will thicken slightly. If too thick, add a tablespoon of water at a time.
  5. Strain (optional but recommended): Pour the syrup through a fine-mesh strainer into a glass jar. Press down on solids to extract all liquid.
  6. Cool and store: Let the syrup cool completely at room temperature before sealing. Refrigerate for up to 2 weeks.

Notes

Don’t skip the salt—it enhances the flavors. Watch your heat to avoid scorching the pumpkin. Shake the syrup before each use as solids settle. The syrup tastes even better on day two as flavors meld. For erythritol, add 1 teaspoon lemon juice to prevent crystallization.
