This homemade pumpkin spice syrup is quick, easy, and made with simple ingredients. It’s perfect for upgrading your iced coffee with deep, warm pumpkin spice flavor.

Ingredients

Scale
  • 1 cup granulated sugar
  • 1 cup water
  • 2 tablespoons pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 2 teaspoons ground ginger
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground allspice

Instructions

  1. Combine sugar and water in a small saucepan. Place over medium heat and stir gently with a whisk until the sugar dissolves completely, about 2-3 minutes.
  2. Add the pumpkin pie spice and salt. Whisk continuously for about 30 seconds to incorporate evenly.
  3. Bring to a gentle simmer, then reduce heat to low. Let simmer for 5 minutes, stirring occasionally.
  4. Remove from heat and stir in vanilla extract. Stir for about 15 seconds until well combined.
  5. Let the syrup cool in the saucepan for 5-10 minutes.
  6. Strain the syrup through a fine-mesh strainer into a glass jar or measuring cup (optional but recommended).
  7. Pour into a clean glass jar or bottle using a funnel. Let cool completely at room temperature before sealing.
  8. Refrigerate until ready to use. The syrup will keep for up to 3 weeks.

Notes

For a stronger spice flavor, let the spices steep in the hot syrup for an extra 10 minutes before straining. Don’t skip the salt—it enhances the flavors. Use freshly opened spices for best results. The syrup can be doubled easily.
