Easy melt-in-your-mouth sliders featuring tender slow-cooked chuck roast with tangy pepperoncini peppers and buttery gravy, perfect for casual gatherings and cozy dinners.

  • 3 to 4 pounds chuck roast (USDA Choice recommended)
  • 1 packet ranch seasoning mix (about 1 ounce)
  • 1 packet au jus gravy mix (about 1 ounce)
  • 1/2 cup unsalted butter (1 stick), sliced into pats
  • 6 to 8 whole pepperoncini peppers
  • 2 tablespoons pepperoncini juice
  • Freshly ground black pepper, to taste
  • 12 slider buns (soft and slightly sweet, like Hawaiian rolls)
  • 12 slices pepper jack or provolone cheese (optional)
  • 2 tablespoons butter, for toasting buns
  • Optional: sliced pickles or extra pepperoncini for topping

Instructions

  1. Pat the chuck roast dry with paper towels to remove excess moisture and season lightly with freshly ground black pepper on all sides.
  2. Place the roast in the slow cooker and sprinkle ranch seasoning mix and au jus gravy mix evenly over the top.
  3. Distribute butter pats over the roast, nestle whole pepperoncini peppers around and on top, then pour 2 tablespoons of pepperoncini juice over everything.
  4. Cover and cook on LOW for 6 to 8 hours until the meat is tender and falls apart easily.
  5. Remove the roast carefully and shred it with two forks in the slow cooker juices, stirring to coat the meat in the sauce.
  6. Butter the insides of each slider bun lightly and toast them butter-side down in a skillet over medium heat until golden and slightly crispy, about 2 minutes. Alternatively, use the oven broiler on low, watching closely.
  7. Assemble sliders by piling shredded pot roast onto the bottom halves of buns, topping each with a slice of cheese to melt slightly, adding a pepperoncini or pickle slice if desired, then covering with the bun tops.
  8. Serve the sliders warm immediately for best flavor and texture.

Notes

For best results, cook on low for at least 6 hours to ensure tender meat. Avoid opening the slow cooker lid frequently. Toast buns just before assembling to prevent sogginess. If roast is dry, stir in a splash of beef broth before shredding. For more heat, add sliced jalapeños or cayenne pepper. Gluten-free buns can be used to make the recipe gluten-free. Dairy-free butter and cheese alternatives can be used or cheese omitted for dairy-free version.
