  • 1 cup granulated sugar
  • ½ cup vegetable oil
  • 2 large eggs

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan and line with parchment paper.
  2. Wash and grate the zucchini using a box grater or food processor. Place grated zucchini in a clean kitchen towel or paper towels and squeeze out all excess liquid.
  3. In a large mixing bowl, whisk together the vegetable oil, sugar, and eggs until the mixture is smooth and slightly pale.
  4. In a separate bowl, whisk together the all-purpose flour.
  5. Pour the wet ingredients into the dry ingredients. Gently fold them together using a spatula.
  6. Add the squeezed zucchini to the batter and fold gently until just combined. Do not overmix.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  9. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Squeezing excess liquid from the zucchini is crucial to prevent a soggy loaf. Do not overmix the batter to ensure a tender crumb. The bread tastes even better on day two. For gluten-free, swap flour for a 1:1 gluten-free blend. For vegan, use flax eggs and vegan sugar.
