Instructions

  1. Pour 2 cups of apple cider into a medium saucepan. Bring to a boil over medium-high heat, then reduce heat to medium-low. Simmer until reduced to exactly 1 cup (about 15-20 minutes). Let cool completely.
  2. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan generously and line the bottom with parchment paper.
  3. In a large mixing bowl, cream together the softened butter and 1 cup sugar until light and fluffy (2-3 minutes).
  4. Add eggs one at a time, beating well after each addition. Stir in vanilla extract and the cooled, reduced apple cider.
  5. In a separate bowl, whisk together flour, baking powder, baking soda, salt, and 1 teaspoon cinnamon.
  6. Gradually add dry ingredients to the wet mixture, mixing on low speed until just combined. Do not overmix.
  7. Pour batter into the prepared loaf pan and smooth the top.
  8. Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean or with moist crumbs.
  9. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool for another 10 minutes (it should be warm, not hot).
  10. Mix 1/2 cup sugar and 1 tablespoon cinnamon in a small bowl. Brush the top and sides of the warm cake with melted butter, then roll or press the cake into the cinnamon sugar mixture to coat.

Notes

Ensure the apple cider is reduced to a syrupy concentrate to remove excess water. Use room temperature ingredients for best texture. Do not overmix the batter to avoid a tough cake. The cake is best served slightly warm. Store in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
