Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5 loaf pan and line the bottom with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, and salt. Set aside.
  3. In a large bowl, whisk sugar and oil until smooth. Add eggs one at a time, whisking after each. Mix in yogurt, vanilla, and orange zest.
  4. Pour dry ingredients into wet ingredients. Gently fold with a spatula until just combined. Do not overmix.
  5. Gently fold in fresh and dried cranberries.
  6. Pour batter into the prepared pan. Bake for 50-60 minutes, covering loosely with foil if the top browns too quickly.
  7. Test for doneness by inserting a toothpick into the center; it should come out clean or with moist crumbs.
  8. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack.
  9. Whisk powdered sugar, milk, and vanilla until smooth to create the glaze.
  10. Drizzle glaze over the warm bread and let it set for 5 minutes before slicing.

Notes

Do not overmix the batter to avoid a dense texture. If using frozen cranberries, do not thaw them; toss in a teaspoon of flour before folding in to prevent sinking. For best results, use room temperature eggs and yogurt. The bread tastes even better on day two as flavors meld.
