  • ¾ cup granulated sugar (150 grams)
  • ¼ cup brown sugar (50 grams), packed, for cinnamon swirl
  • 2 large eggs, room temperature
  • ½ cup sour cream (120 ml)
  • 1 teaspoon vanilla extract
  • 1 ½ cups fresh peaches (225 grams), peeled and diced

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan with butter or non-stick spray. Optionally line with parchment paper.
  2. In a medium bowl, whisk together all-purpose flour, baking powder, baking soda, cinnamon, and salt. Set aside.
  3. In a large bowl, beat softened butter and granulated sugar until light and fluffy, about 3 minutes.
  4. Add eggs one at a time, beating well after each addition. Stir in sour cream and vanilla extract until smooth.
  5. Gently fold dry ingredients into wet mixture using a rubber spatula until just combined. Avoid overmixing.
  6. Carefully fold in diced fresh peaches, handling gently to keep texture intact.
  7. Pour half the batter into the prepared loaf pan and smooth evenly.
  8. Mix brown sugar with 1 teaspoon cinnamon in a small bowl. Sprinkle half over the batter in the pan.
  9. Add remaining batter on top, then sprinkle remaining cinnamon sugar blend. Swirl gently with a butter knife for a marbled effect.
  10. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs. Start checking at 50 minutes.
  11. Let bread cool in pan for 15 minutes, then transfer to a cooling rack. Slice once completely cool.

Use room temperature ingredients for best results. Fold peaches gently to avoid breaking them down. Swirl cinnamon sugar gently to keep distinct ribbons. If peaches are very juicy, pat dry to avoid wet batter. Can substitute gluten-free flour 1:1 and use dairy-free alternatives for sour cream and butter. Frozen peaches can be used if thawed and drained.
