Ingredients

  • Fresh berries: strawberries (hulled and halved), blueberries, raspberries, blackberries
  • Ricotta cheese (1 cup, about 250g)
  • Fresh mozzarella balls
  • Mild goat cheese log
  • Toasted almonds (½ cup, about 65g)
  • Honey-roasted pecans (½ cup, about 65g)
  • Pumpkin seeds
  • Water crackers
  • Thinly sliced baguette (toasted lightly)
  • Gluten-free crispbreads (optional)
  • Local honey (2 tablespoons for dip, plus extra for drizzling)
  • Strawberry jam (about ½ cup or 120ml)
  • Dark chocolate squares
  • Fresh mint leaves
  • Lemon zest (pinch)
  • Flaky sea salt

Instructions

  1. Prepare the berries: Gently rinse all berries under cold water and pat dry with paper towels. Hull and halve the strawberries. Set aside on a clean plate to drain any excess moisture.
  2. Make the honey ricotta dip: In a small bowl, combine 1 cup (250g) ricotta cheese with 2 tablespoons local honey and a pinch of lemon zest. Stir until smooth and creamy. Adjust sweetness if desired.
  3. Toast the nuts: On a dry skillet over medium heat, toast ½ cup (65g) almonds and ½ cup (65g) pecans for 5-7 minutes, stirring frequently. Remove from heat and let cool.
  4. Prepare crackers and bread: Arrange water crackers and toasted baguette slices on a serving plate. Optionally, brush baguette slices with olive oil and toast in oven at 350°F (175°C) for 5 minutes for extra crunch.
  5. Assemble the board: Place small bowls with ricotta dip, strawberry jam, and honey on the board. Arrange fresh berries around the bowls in clusters by type. Add cheese portions with space between each type. Scatter toasted nuts and pumpkin seeds in small piles. Garnish with fresh mint leaves and sprinkle flaky sea salt over cheeses and berries.
  6. Final touches: Add dark chocolate squares in a corner. Fill any empty spots with extra berries or nuts.

Notes

Keep berries dry and blot any excess juice during assembly to prevent sogginess. Assemble board shortly before serving for freshness. For dairy-free, substitute ricotta and goat cheese with cashew-based cream cheese or coconut yogurt. Toast nuts gently to avoid bitterness. Store leftovers separately and consume berries within 24 hours.
