  • ¼ cup (56g) unsalted butter, softened
  • 2 cups (240g) powdered sugar, sifted
  • 2 tablespoons freshly squeezed orange juice
  • 1 teaspoon grated orange zest
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.
  2. In a medium bowl, sift together the flour, black cocoa powder, baking powder, baking soda, and salt.
  3. In a large bowl, beat the softened butter and granulated sugar until light and fluffy, about 3-4 minutes on medium speed.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Alternate adding the dry ingredients and buttermilk to the wet ingredients, beginning and ending with the dry ingredients. Fold gently with a rubber spatula after each addition; do not overmix.
  6. Add a few drops of black food coloring gel if using, and mix gently until color is even.
  7. Spoon the batter evenly into the cupcake liners, filling about two-thirds full.

  10. To prepare the frosting, beat the cream cheese and softened butter until smooth.
  11. Gradually add powdered sugar, then mix in orange juice, orange zest, and vanilla extract. Beat until fluffy and spreadable.
  12. Frost the cooled cupcakes generously using a piping bag or knife. Optionally, add extra orange zest or Halloween sprinkles.
  13. If frosting is too soft, chill for 10 minutes before applying.
