A rich and cozy peach cobbler featuring a brown sugar bourbon-infused filling and a crunchy oat crumble topping, perfect for summer or any time you want a comforting dessert.

Ingredients

Scale
  • 67 ripe peaches, peeled, pitted, and sliced (about 4 cups)
  • 3/4 cup packed light brown sugar
  • 2 tablespoons bourbon (e.g., Maker’s Mark)
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons cornstarch
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg (optional)
  • Pinch of salt
  • 6 tablespoons unsalted cold butter, cubed
  • 1 cup rolled oats
  • 3/4 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  1. Prep the peaches by peeling and slicing into roughly 1/2-inch thick slices. Toss with lemon juice, brown sugar, cinnamon, nutmeg (if using), salt, and bourbon in a large mixing bowl. Stir to combine evenly.
  2. Sprinkle cornstarch over the peach mixture and stir gently until combined. Set aside while preparing the topping.
  3. In another bowl, mix rolled oats, all-purpose flour, granulated sugar, and a pinch of salt. Add cold, cubed butter and use a pastry cutter or fingers to work it into the dry ingredients until coarse crumbs form. Stir in vanilla extract and nuts if using. Do not overmix.
  4. Pour the peach filling into a prepared 9×13-inch baking dish and spread evenly. Sprinkle the oat crumble topping generously over the peaches, covering completely.
  5. Bake in a preheated oven at 350°F (175°C) for 40-45 minutes until the topping is golden brown and peach juices are bubbling.
  6. Let the cobbler cool slightly for 10-15 minutes before serving to thicken the filling.

Notes

If topping browns too fast, tent loosely with foil halfway through baking. For gluten-free, substitute all-purpose flour with almond flour or gluten-free blend. For dairy-free, use coconut oil or vegan butter instead of butter. Avoid stirring peaches once in the baking dish to preserve syrupy juices. Peeling peaches is recommended for best texture; blanching helps ease peeling.
