  • 1 cup brown sugar (light or dark)
  • 1/3 cup honey (raw or wildflower preferred)
  • 1 cup pineapple chunks, drained (fresh or canned in juice)
  • 1/4 cup Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1/4 teaspoon ground cloves
  • Ground black pepper to taste
  • Optional: 2 tablespoons fresh orange juice

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Remove the ham from packaging and pat dry with paper towels. Score the surface in a diamond pattern about 1/4 inch deep.
  3. In a medium bowl, combine brown sugar, honey, finely chopped or blitzed pineapple chunks, Dijon mustard, apple cider vinegar, ground cloves, and black pepper. Whisk until smooth. Add orange juice if desired.
  4. Using a basting brush, generously coat the ham with about half the glaze. Place the ham on a rack in a roasting pan, cut side down.
  5. Bake for 1 hour, basting with the remaining glaze every 20 minutes to cover all surfaces.
  6. Check the internal temperature with a meat thermometer; it should reach about 140°F (60°C). If not, continue baking in 10-minute increments, basting each time.
  7. Remove the ham from the oven and tent loosely with foil. Let rest for 15 minutes.
  8. Slice along the spiral cuts and serve warm or at room temperature.

Notes

Score the ham to allow glaze penetration. Apply glaze multiple times during baking for a sticky, caramelized crust. Cover loosely with foil if glaze caramelizes too quickly to prevent burning. Use fresh pineapple if possible for brightness. Let ham rest after baking to keep juices locked in. For gluten-free, ensure Dijon mustard is gluten-free. Maple syrup can substitute honey if needed.
