  • Pure vanilla extract โ€“ 2 teaspoons
  • For the Galaxy Buttercream:
  • Unsalted butter โ€“ 1 cup (230g), softened
  • Powdered sugar โ€“ 4 cups (480g), sifted
  • Heavy cream โ€“ 2-3 tablespoons (30-45ml)
  • Pure vanilla extract โ€“ 1 teaspoon
  • Gel food coloring: midnight blue, purple, black, and white
  • Edible shimmer dust or luster dust โ€“ optional
  • Decorative Gold Leaf:
  • Edible gold leaf sheets โ€“ 1-2 packs

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC). Grease and line two 8-inch round cake pans with parchment paper.
  2. In a large bowl, sift together the all-purpose flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
  3. Using a mixer, beat the softened butter and granulated sugar on medium speed until light and fluffy, about 3-4 minutes.
  4. Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in the vanilla extract.

  10. Divide buttercream into 4 bowls. Tint three with gel colors: midnight blue, purple, and black; leave one white. Optionally add shimmer dust to colored bowls.
  11. Place one cake layer on serving plate. Spread a thin layer of buttercream on top. Add second cake layer.
  12. Apply a thin crumb coat of white buttercream over entire cake. Chill for 15 minutes to set.
  13. Dollop spoonfuls of each colored buttercream around cake. Using an offset spatula or bench scraper, gently swirl colors together in random patches without overblending.
  14. Carefully place small flakes of edible gold leaf on the frosted cake using tweezers or a dry brush, scattering thoughtfully.
