  • 1/4 teaspoon salt
  • 1 1/2 cups (180g) powdered sugar, sifted
  • 1/4 cup (57g) unsalted butter, softened
  • 1/3 cup (about 50g) fresh blueberries, pureed
  • 1/2 teaspoon vanilla extract
  • 12 tablespoons milk (dairy or dairy-free), as needed for consistency
  • Fresh strawberries, sliced thinly (for decoration)
  • Fresh blueberries (for decoration)

Instructions

  1. Preheat oven to 350ยฐF (175ยฐC). Lightly grease a 24-cup mini muffin pan or line with mini paper liners.
  2. In a medium bowl, whisk together melted butter and sugar until combined but not grainy, about 1 minute.
  3. Add eggs one at a time, beating well after each addition, then stir in vanilla extract.
  4. In a separate bowl, sift together flour, cocoa powder, and salt. Slowly fold dry ingredients into wet mixture until just combined. Do not overmix.
  5. Spoon batter into mini muffin cups, filling about 2/3 full.
  6. Bake for 12-15 minutes, checking at 12 minutes with a toothpick. It should come out with moist crumbs but no wet batter.
  7. Let brownies cool completely in the pan on a wire rack.
  8. To make frosting, beat softened butter until creamy. Gradually add powdered sugar and mix well.
  9. Slowly add pureed blueberries and vanilla extract. Adjust consistency with milk, adding a teaspoon at a time until smooth and spreadable but firm enough to hold shape.
  10. Frost cooled brownie bites with a thin layer of blueberry frosting using a piping bag or small spatula.
  11. Decorate each brownie with fresh blueberries on the top left corner to represent stars and arrange thin strawberry slices in horizontal rows for stripes.
  12. Chill the frosted brownie bites in the refrigerator for about 15 minutes to set the frosting before serving.

Notes

Use Ghirardelli cocoa for rich chocolate flavor and Organic Valley butter for creamy frosting. Frozen blueberries thawed and drained can substitute fresh blueberries. For gluten-free, swap all-purpose flour with almond flour or gluten-free flour blend. If frosting is too runny, chill for 10 minutes before frosting. If batter is thick, add a tablespoon of milk to soften.
