A quick and easy summer charcuterie board featuring fresh berries, creamy brie, and crunchy honeyed walnuts, perfect for entertaining or a light snack.

  • 8 oz (225 g) Brie cheese, whole wheel or wedge
  • 1 cup (150 g) fresh strawberries, hulled and halved
  • 1 cup (150 g) fresh blueberries
  • 1 cup (125 g) fresh raspberries
  • 1 cup (150 g) seedless green grapes, halved
  • Assorted crackers or sliced baguette
  • Fresh mint leaves for garnish (optional)
  • 1 cup (120 g) walnuts, halves or pieces
  • 3 tbsp (45 ml) honey, preferably raw or wildflower
  • 1 tbsp (15 g) unsalted butter
  • Pinch of sea salt
  • 1/4 tsp (0.5 g) ground cinnamon (optional)

Instructions

  1. Prepare the Honeyed Walnuts (10 minutes): Heat a medium non-stick skillet over medium-low heat. Melt the unsalted butter gently. Stir in walnuts, honey, sea salt, and cinnamon if using. Stir constantly for 4-5 minutes until walnuts are toasted, shiny, and sticky with honey. Avoid burning by lowering heat if needed. Spread on parchment paper to cool and harden slightly.
  2. Wash and Prep the Berries (5 minutes): Rinse all berries gently under cold water and pat dry. Hull and halve strawberries, halve grapes, keep raspberries and blueberries whole.
  3. Slice the Brie (2 minutes): Use a sharp knife to cut brie into wedges or smaller pieces for serving. Optionally leave a whole round with a small wedge cut out.
  4. Arrange the Board (5-7 minutes): Place brie on the board or platter. Scatter berries artistically around, mixing colors and shapes. Add honeyed walnuts in small piles. Fill gaps with crackers or baguette slices. Sprinkle fresh mint leaves over some berries for freshness.
  5. Final Touches: Optionally drizzle extra honey over brie or walnuts before serving. Serve at room temperature.

Notes

Keep heat medium-low when toasting walnuts to avoid burning. For a crispier walnut texture, roast dry in oven for 5 minutes before coating with honey and butter. Do not soak berries; rinse and pat dry to avoid mushiness. Let brie sit at room temperature for at least 15 minutes before serving. Honeyed walnuts can be made ahead and stored in an airtight container at room temperature for up to a week.
