A fast and easy recipe for soft, gooey cinnamon roll bites made with pre-made crescent dough and a homemade cinnamon sugar mix, perfect for busy mornings or late-night cravings.

  • 3 tbsp (42 g) unsalted butter, melted
  • 1/3 cup (67 g) packed brown sugar
  • 1 tbsp (8 g) ground cinnamon
  • 1 tsp (5 ml) vanilla extract (optional)
  • 1 cup (120 g) powdered sugar
  • 23 tbsp (3045 ml) milk
  • Pinch of salt

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper and set aside.
  2. In a small bowl, combine 1/3 cup packed brown sugar, 1 tablespoon ground cinnamon, and a pinch of salt. Mix well.
  3. Unroll the refrigerated crescent dough onto a clean surface. Press the seams together with your fingers to form one solid rectangle.
  4. Brush the dough evenly with 3 tablespoons melted unsalted butter using a pastry brush or spoon.
  5. Sprinkle the cinnamon sugar mixture evenly across the buttered dough, covering every corner.
  6. Cut the dough into about 16 small squares (approximately 2-inch / 5 cm pieces).
  7. Place the squares on the prepared baking sheet, leaving a little space between each.
  8. Bake for 12-15 minutes, or until the bites are puffed up and golden brown on top.
  9. While baking, whisk together 1 cup powdered sugar, 2 tablespoons milk, and 1 teaspoon vanilla extract in a bowl. Add extra milk if needed to achieve a smooth, drizzle-able glaze.
  10. Let the baked bites cool for about 5 minutes, then drizzle the glaze over the warm bites using a spoon or fork. Serve immediately.

Notes

Use fresh ground cinnamon for best flavor. Press seams of dough to prevent sugar leakage. Cut dough into 2-inch squares for soft centers. Rotate baking sheet halfway for even browning.
