Quick Baked Salmon with Garlic Dijon Cream Sauce

A fast and flavorful baked salmon recipe featuring a creamy garlic Dijon mustard sauce, perfect for busy weeknights or casual dinners.

  • 4 salmon fillets (about 6 oz / 170 g each), fresh or thawed, skin-on or skinless
  • 2 tbsp olive oil
  • Salt and black pepper, to taste
  • 3 garlic cloves, minced
  • 2 tbsp Dijon mustard
  • 3/4 cup (180 ml) heavy cream (substitute with coconut cream for dairy-free)
  • 1 tbsp fresh lemon juice
  • 2 tbsp fresh parsley, chopped (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the salmon fillets dry with paper towels. Lightly coat both sides with olive oil, then sprinkle salt and pepper evenly. Place the fillets skin-side down in an oven-safe baking dish.
  3. In a mixing bowl, whisk together minced garlic, Dijon mustard, heavy cream, and fresh lemon juice until smooth. Add a teaspoon of water or milk if the cream is too thick.
  4. Pour the sauce evenly over the salmon fillets, about 2 tablespoons per fillet.
  5. Bake uncovered for 12-15 minutes, depending on thickness, until the salmon flakes easily with a fork and the sauce is lightly golden and bubbling.
  6. Remove from oven and let rest for 2 minutes.
  7. Garnish with chopped fresh parsley and serve immediately.

Notes

Pat salmon dry before seasoning to help oil and seasoning stick and prevent steaming. Use fresh garlic for best flavor. Mix sauce just before baking to prevent separation. Broil for last 2 minutes for extra crispy skin, watching closely to avoid burning. Avoid overbaking to keep salmon moist. Leftovers can be used in pasta or salad toppings.
