  • 4 tablespoons unsalted butter, cubed
  • 6 cloves garlic, minced

  • 1 teaspoon fresh thyme leaves (optional)
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • 2 pounds russet potatoes, peeled and quartered
  • ½ cup whole milk, warmed
  • 4 tablespoons unsalted butter, softened (for potatoes)
  • 1 teaspoon salt (for potatoes)
  • ¼ teaspoon black pepper (for potatoes)
  • 2 cloves garlic, whole (for boiling potatoes)

Instructions

  1. Place peeled and quartered potatoes in a large pot, cover with cold water by 1 inch. Add 2 whole garlic cloves and 1 teaspoon salt. Bring to a boil, then simmer for 12-15 minutes until fork-tender. Drain well.
  2. Return drained potatoes to the pot and let steam dry for 1 minute. Add softened butter and warm milk. Mash until smooth and creamy. Season with salt and pepper to taste. Cover and set aside.
  3. While potatoes boil, pat steak cubes dry with paper towels. Toss with 1 tablespoon olive oil, salt, and pepper. Let sit at room temperature for 10 minutes.
  4. Heat a large cast iron skillet over high heat with remaining 1 tablespoon olive oil until shimmering and just smoking. Add steak bites in a single layer (work in batches if needed). Sear undisturbed for 2-3 minutes until deep brown crust forms. Flip and sear another 2 minutes for medium-rare.
  5. Reduce heat to medium-low. Push steak to one side, add cubed butter and minced garlic. Stir garlic in melted butter for 30 seconds until fragrant. Toss steak bites in garlic butter to coat. Add fresh thyme if using.
  6. Remove pan from heat. Let steak bites rest in garlic butter for 2-3 minutes. Spoon mashed potatoes onto a platter, top with steak bites, drizzle remaining garlic butter over everything. Garnish with fresh parsley.

For best results, ensure the pan is screaming hot before adding steak. Don’t overcrowd the pan—work in batches if needed. Letting the steak rest in garlic butter after cooking is crucial for tenderness. For extra creamy potatoes, substitute half the milk with heavy cream. Use fresh garlic, not pre-minced jarred garlic.
