A quick and easy one-pan meal featuring garlic butter ground beef and tender-crisp broccoli, perfect for busy weeknights and packed with bold flavors.

Ingredients

Scale
  • 1 lb (450 g) ground beef (80/20 preferred)
  • 3 cups broccoli florets (about 300 g), fresh or frozen
  • 4 tbsp unsalted butter, divided
  • 4 cloves garlic, minced
  • 1 small onion, finely diced (optional)
  • Salt and freshly ground black pepper, to taste
  • 1/4 cup beef broth or water (60 ml)
  • Red pepper flakes (optional)
  • Cooked rice or noodles, for serving

Instructions

  1. Prep your ingredients: mince the garlic, dice the onion, and cut broccoli into bite-sized florets (5-7 minutes).
  2. Heat 2 tbsp butter in a large non-stick skillet over medium heat. Add the onion and sauté for 2-3 minutes until softened and translucent.
  3. Add the garlic and cook for 30 seconds until fragrant, being careful not to brown it.
  4. Add the ground beef to the pan, break it up with a spatula, season with salt and pepper, and cook for 6-8 minutes until browned and no longer pink.
  5. Push the beef to one side of the pan, add the remaining 2 tbsp butter to the empty side. When melted, add the broccoli florets and pour the beef broth or water over them.
  6. Cover the pan with a lid or foil, reduce heat to medium-low, and steam the broccoli for 4-5 minutes until tender but still bright green and slightly crisp.
  7. Remove the lid and stir everything together. Taste and adjust seasoning with salt, pepper, or red pepper flakes if desired.
  8. Serve immediately over cooked rice or noodles.

Notes

Do not overcrowd the pan to ensure beef browns properly. Stir garlic constantly to avoid burning. Steam broccoli just until tender-crisp to maintain texture and color. If pan is crowded, cook broccoli separately. For dairy-free, substitute butter with olive oil. Use gluten-free broth and noodles for gluten-free version. Leftovers keep well refrigerated up to 3 days and reheat gently on stovetop with added liquid.
