  • 6 tablespoons (85g) cold unsalted butter, cubed
  • 1/2 cup (120g) pumpkin puree
  • 1/4 cup (60ml) heavy cream
  • 1 teaspoon vanilla extract
  • 1 cup (120g) powdered sugar
  • 3 tablespoons pure maple syrup
  • 12 teaspoons milk or cream (optional, for glaze consistency)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, pumpkin pie spice, cinnamon, and salt.
  3. Add cold cubed butter to the flour mixture. Cut in with a pastry cutter or two forks until mixture resembles coarse crumbs with some pea-sized butter pieces.
  4. In a small bowl, whisk together pumpkin puree, heavy cream, and vanilla extract until smooth.
  5. Pour wet ingredients into dry ingredients. Stir with a fork or spatula just until dough comes together (it will look shaggy).
  6. Turn dough out onto a lightly floured surface. Gently bring together and pat into a 3/4-inch thick circle. Cut into 8 wedges.
  7. Place wedges on prepared baking sheet, spacing 2 inches apart. Bake for 12-15 minutes until bottoms are golden and tops are set. Cool on baking sheet for 5 minutes, then transfer to a cooling rack.
  8. For the glaze: In a small bowl, whisk together powdered sugar and maple syrup until smooth. Add milk or cream 1 teaspoon at a time if too thick.
  9. Drizzle glaze over cooled scones. Let set for 5 minutes before serving.

Notes

Keep butter and cream cold for flaky scones. Do not overmix dough. For best results, use fresh baking powder. Scones can be frozen unglazed for up to 3 months.
