  • 4 cups cubed and frozen watermelon (about 600g)
  • 1012 fresh mint leaves, washed and gently bruised
  • 1 cup freshly squeezed and chilled lemonade (about 240 ml), sweetened with 1-2 teaspoons honey or agave

Instructions

  1. Freeze the watermelon cubes on a parchment-lined baking sheet for at least 4 hours or overnight.
  2. Juice 3-4 fresh lemons to yield about 1 cup of juice, sweeten slightly with honey or agave, and chill.
  3. Rinse and gently bruise the mint leaves to release flavor.
  4. Place frozen watermelon cubes in a blender and pulse until coarse icy texture forms (30 seconds to 1 minute).
  5. Add bruised mint leaves and chilled lemonade to the blender and blend on high until smooth and slushy (30-45 seconds).
  6. Taste and adjust sweetness by adding more honey/agave if needed; add more lemonade or cold water if too thick.
  7. Serve immediately in tall glasses, garnished with a mint sprig or lemon wheel.
